The China Cuisine Association (CCA) said that Chinese people's favorite dish in 2017 was crayfish. The association also said China's catering industry got more than 3.9 trillion yuan last year.
It said savory flavor  was the most popular among Chinese people in 2017. About 23.3 percent of Chinese people liked the savory flavor. The spicy food ranked second and about 17.2 percent of Chinese people liked spicy food. Crayfish, or "little lobster" , was the most popular dish.
Crayfish was first brought to China by a Japanese business man in the 1920s. According to the Global Times, crayfish appeared in the Jianghan Plain of Qianjiang City, Jiangsu Province about 30 years ago. Now the crayfish has become big business for this city. China is the world's largest producer of crayfish. Around 80 percent of crayfish in Qianjiang City are exported to Europe and the United States.
