The ancient city of Xi’an in Shaanxi province, known for its Terracotta Warriors, is also a food paradise. Located on the ancient Silk Road, foods in Xi’an have been influenced by places far and wide. With a long history of growing wheat, Xi’an is home to various flour-based food, with simple noodles coming in different shapes, sizes, and tastes. Now, let’s check out some typical foods from Xi’an.
Roujiamo is one of the most famous street foods in Xi’an and is also known as China’s version of the hamburger. It consists of small pieces of pork with green peppers and cilantro inside crispy (酥脆的) baked round bread. Yangrou paomo is also a famous food from Xi’an. The main ingredient is mutton, and it’s served with very small, narrow pieces of bread, sliced mutton, scallions, cilantro, chili, and a flavorful soup poured over it. Guokui, or dry bread, is known by many people too. It tastes crispy outside and soft inside. It’s usually paired with pepper, onion, garlic and other spices. 
Besides, Xi’an is a noodle city. Biangbiang noodles are thick, fat and long. They are three fingers wide, and served dry with toppings of chili and streaky pork. Liangpi is cold noodles made from wheat or rice flour, and a popular dish in many other places in China, especially in summer. It tastes cold, and is known for its white color, thin shape, smooth surface, and tender (嫩的) taste. Youpo mian are hand-pulled noodles. Boiling oil is poured over the top to create a special, pleasant smell when serving.
Above all else, there are also other delicious foods in Xi’an. For example, huluji, gourd-shaped (葫芦状) chicken, is boiled and deep-fried until tender. The chicken has golden and crisp skin as well as fresh and tender meat. And zenggao, a rice cake, is made of sticky rice and Chinese jujubes (大枣). It earns its name from its cooker, the zeng, a traditional cooker with small holes. Then, there are soup dumplings, which are steamed buns served with sauce inside. They are finely processed with carefully-chosen materials. They feature fresh meats, thin wrappers, and rich flavor.
