Three years ago, Tyler Baxter was a Northampton Community College student who learns cooking, waiting at the Lehigh Valley Food & Wine Festival to find out whether he won the chance of a lifetime: to work in celebrity chef Emeril Lagasse's New Orleans restaurants.

He won. He's a chef at The Bayou in Bethlehem and he will be on stage at this weekend's 6th annual Lehigh Valley Food & Wine Festival helping one of Emeril's top chefs demonstrate dishes as NCC culinary students and others watch.

Baxter will be one of several chefs to appear at the festival Friday, May 29 to Sunday, May 31 at the Sands Bethlehem Event Center. The festival is your chance to sample dishes from many of the area's top restaurants along with champagne and spirits and wines from around the world.

The event is presented by Northampton Community College to raise money for the college foundation. A portion of the funds are used to send three NCC culinary students. The festival starts with Friday's free chef demonstration. Emeril, who is the culinary director at Emeril's Homebase,   won't be at the festival because of a scheduling conflict but in his place will be Chris Wilson, who will be assisted by Baxter. Wilson and Baxter will demonstrate a classic Cajun dish: a banana chocolate bread pudding.

Saturday and Sunday are all about the Grand Tastings, where you can sample dishes from restaurants in the region as well as sample fine wines from around the world, champagne and spirits. Live music will be provided by the local favorite Craig Thatcher Band on Saturday and the May Babies on Sunday. Each attendee will also receive a souvenir wine glass. More than 25 Lehigh Valley area restaurants will participate in the festival. A private highlight is the appearance of celebrity chef Georges Perrier, who will be at a Friday night dinner for event sponsors.
