We sometimes eat rice porridge for breakfast to warm up our bodies. Rice porridge — or okayu in Japanese — is made in the Thai style by mixing steamed rice and water in a blender before cooking it with soft fire. Here, we will share the way to make warm, easy-to-eat okayu with pork meatballs.
This kind of okayu is thick(浓稠), and cold rice can be used to make it. When blending the rice, water should be added little by little.
When cooking the rice porridge with soft fire, don’t burn it. It should be cooked over medium heat first. When it reaches a boiling point, take small amounts of porridge into a mixture of pork, sauce and garlic and put it all together firmly so that the ingredients(原料) are blended well. The spoonfuls of porridge act to get the ingredients together and also make the meatballs soft.
The remaining porridge in the pot should be cooked over low heat. The pork mixture is made into bite-size balls, which are dropped into the pot. The meat’s taste goes into the porridge to make it delicious.
Some grains of rice may remain, but the porridge can be drunk like a soup. It is a comforting dish that warms the body and the soul.
